Well hello, my lovelies! Another week has flown by again in the blink of an eye. I hope you enjoyed your Bank Holiday weekend. I spent most of mine at QVC, my home from home, which was great. I kind of had my ‘weekend’ last week as I was off on Wednesday, Thursday and Friday. My best boy friend, Steven, came to stay at Chez Huntley until Saturday and it was just the tonic for both of us! I say best boy friend as I have a best girl friend, too. Lovely Mandy whom many of you have read about on here in the past.
It had been a while since our last catch-up so you can imagine the excitement at getting to spend a few days together. My son, Tom, also gets on very well with Steven and his family so it was great for all three of us to spend time watching movies, playing games and cooking together. By the way, for the first time in my life I won at Trivial Pursuit! Not that I like to brag but… well, ok, just going to bask in the glory of winning against the boys for a little longer!
On one of the nights we each agreed we’d make a course for dinner. I’m vegan, my son is pescatarian and Steven is neither. He eats everything but was more than happy to prepare a nice vegan meal together. My son made roasted asparagus with sticky lemon, garlic and balsamic glaze to start. Oh my goodness, so simple but so divine.
Steven cooked us a beautiful faux chicken tikka curry (pictured above). I call it ‘ficken curry’… but I do so carefully, ha ha! Wow! It was such a tasty dish. He’s done it with chicken before so I simply got some faux chicken pieces from the supermarket which really worked well. They’re from Viva Vivera and are soya based. He cooked the dish on low for several hours and the flavours were amazing!
I took care of pudding. I found a really easy recipe for a blueberry cake which I mixed up in my lovely KitchenAid mixer and I made some of my easy, almost instant, ice cream with just frozen bananas and pineapple. Just chucked them in the Vitamix with a little water and it was a delicious, homemade, no added anything at all accompaniment to the cake. The hot and cold worked really well together.
Steven was really surprised at how great the vegan food we ate during his visit was and has even said that he is going to substitute some of his meals with meat alternatives. It has come a long way in recent years. He particularly liked this ‘feak’ or fake steak, also from Viva Vivera. No, I’m not sponsored by them, ha ha. I just know I’ll get questions so thought I’d say now. Hmm, maybe I should ask QVC if we can get them on board! Doesn’t it look yum? I sautéed some chestnut mushrooms, red onion and garlic and made a mustard mash to go with it.
Ok, so with all those calories on board I insisted we should go for a couple of walks. Steven reluctantly agreed to, hee hee. I just LOVE my Fitbit and seeing all the calories burned and steps taken. Maybe you got the one we had on Sunday? It’s brilliant. You can check out our Fitbit range here.
Another outstanding bit of smart tech is from Google. It’s the Home Hub Smart Speaker coming up on the 1st of June. It’s pretty cool in that it acts like a personal assistant. It’s voice activated and has a 7 inch touchscreen so it’s a bit like having a tablet which is also a speaker, hands-free helper and much more besides!
One aspect which I really like is that you can get YouTube videos to play through it so if you’re looking for great recipes whilst you’re in the kitchen you can just call up instructional videos and whip up something nice and healthy… or naughty, up to you! I also like pulling up workout vids. There are loads of yoga clips or even Bodyblade tutorials on there so it would suit me down to the ground! Great little innovation.
