Once the final fork has gone down, plenty of leftover Brussels sprouts will be left chilling in fridges and many of us will be wondering what to do with them, so Simon has a simple and delicious recipe for turning them into a yummy side-dish for roast beef on Boxing Day.

If you want to put your own spin on this tasty creation, try adding some fried bacon lardons and buttery leeks, or perhaps stir in some crumbled stilton.

Last but not least, you might have one eye on the new year and giving your stomach a rest from all of the rich and salty foods that abound over the festive period, so Simon has got a quick detoxing smoothie idea to help your health kick in January.
