I cook this dish time and time again because it's an absolute doddle to make and not too expensive. Plus it looks impressive so if you're planning a dinner party, this is a great recipe to try.
Serve it with either fresh pasta, fried slices of polenta, or new potatoes and green veg - french beans are really good with this.

Alison's Italian chicken recipe
Ingredients:
Four chicken breasts
One jar of shop-bought puttanesca sauce
8 slices of pepper salami
1tbsp capers
Olives stuffed with sundried tomatoes
1 tin of chopped tomatoes
8 fresh baby vine tomatoes
Fresh basil
Mozarella cheese
Preheat oven to 180'C/350 F/Gas mark 4
1. Place chicken into an oven-proof dish.
2. Pour over the chopped tomatoes, olives, capers and the baby tomatoes.
3. Tear half of the basil and add to the mix.
4. Place slices of pepper salami over the top of this and then the mozzarella sliced on top again.
5. Place in the oven for about 30 mins or until bubbling, when the cheese has all melted and is brown on the top.
6. Take out of the oven and garnish with the remainder of the fresh basil.


Just wanted to say I did this recipe for my son's birthday. He loved it and said it was his favourite meal and the flavours in it were perfect. He loves to cook so this was a real compliment. It's so easy and so delicious.
