I must have been making this lasagne dish for about 15 years - it pre-dated the move to the house I live in now, and we've been there 13 and a half years! I made it Saturday night after the footie (which we lost!) and the comments were: Sophie - yummy, Daniel - delicious and Chris - very nice!
Incidentally, if you're making it for three people, or two with very large appetites, you can leave out the middle layer of pasta.
So try it yourself and I hope you enjoy it!

Ingredients:
9 sheets of green lasagne
4oz walnut pieces
8oz frozen chopped spinach
8oz cottage cheese
1 onion
1 clove garlic
1 tin of chopped tomatoes
1 tbsp tomato puree
black pepper to taste
For the cheese sauce:
1 pint skimmed milk
2oz plain wholemeal flour
2 oz margarine
4 oz mature cheddar
2 tbsp grated parmesan
Pre-heat oven to 200'C (400F / Gas Mark 6)
- Place spinach in petal steamer in saucepan and steam for about five minutes
- Chop walnuts quite finely and mix with cottage cheese and spinach
- Chop onion and garlic and soften in a little olive oil
- Add tinned tomatoes, tomato puree and black pepper. Bring to boil, cover and simmer while you make the cheese sauce
- Melt margarine in non-stick pan, add flour and cook for a minute. Add milk while whisking gently with a balloon whisk. When thoroughly mixed, turn up heat and bring to boil stirring constantly. Take off heat and then stir in grated cheddar
- Lightly grease lasagne dish and line with three sheets of lasagne. Pour half of cheese sauce followed by half of tomato sauce over, then cover with three more lasagne sheets. Cover those with spinach/walnut/cottage cheese mixture, then spread over remainder of tomato sauce. Place final three lasagne sheets over this, cover with cheese sauce and sprinkle with parmesan
- Place in oven for 30 minutes. Allow to sit for a minute before serving with salad and garlic ciabatta

Think you are a brilliant presenter and wanted to let you know that your recipe for the lasagne worked like a treat. I invited my vegeterian and footie friends over last night and every last morsel was eaten (with comments like delicious and can I have a second helping please). Sounds great. Will definitely try this. But ditto the request for the choc cake that I've heard you mention. You just can't have enough recipes for chocolate cake so I'd love to know yours. I also hit the big 'Hawaii' this year and you are an absolute inspiration!
