Simon's chocolate fudge pudding

Hi Guys! 

As promised on this morning's Morning Show with Simon Brown and our amazing Today's Special Value slow cooker, here I am with his recipe for the delicious Chocolate Fudge Pudding that he delighted us with.

The savoury recipes are generally a simple case of brown the meat, add the other ingredients and let the slow cooker work its magic.

For this one though, it's worth having a recipe to follow, so here it is...

 

Simon's Slow Cooker Chocolate Fudge Pudding


  1. Sift 4oz plain flour, 4oz sugar, 2oz cocoa powder and 1 tsp baking powder together in a bowl.
  2. Melt 1oz butter and add to bowl with 4 floz milk. Mix thoroughly.
  3. Grease sides of slow cooker bowl and add mix, levelling it out.
  4. Add 6oz dark muscovado sugar and 2oz sieved cocoa powder to half a pint of boiling water in a jug. Stir or whisk until all the sugar has dissolved and there are no lumps of cocoa. Gently pour over cake mix. DO NOT STIR!!
  5. Cook for about 90 minutes on high setting until a skewer is clean coming out of the cake. Serve with creme fraiche, cream, ice cream or chocolate custard. Or all four! (That bit was added by me - KT X)

If you leave it longer, turn the setting to keep warm. The pudding will be fine, although eventually the fudge sauce will become thicker.

Thankyou Kathy!! I'm a chocoholic and this is going to be the first recipe in my lovely stylish new slow cooker (I have the black). Hiding this one from my housemates! Just turned 30 recently and have treated myself to a few new things. This is great to use after a long day at work on a busy cosmetics counter then travelling home when sometimes it's hard to find the energy to cook for one from scratch every day. I made this with plain flour and it was fine! nice taste - quite rich and v. chocolatey but not sickly sweet - more pudding recipes please Simon for fruit sponge and treacle sponge would be good please

I made this for my valentine last night, it was a winner! There was enough for 4 people easily, but being only 2 of us means we have some for tonight as well, we had ours with custard. It's going to the top of our fav pudding list, and so easy. Thanks for the recipe.

Hi everyone. Just a quickie to answer your queries - simon says plain flour, although I don't think it would harm if you only have self raising. This is really a recipe for the slow cooker, but you could try it in the oven - probably about 180 degrees C (160 fan) but it would need less time - keep on eye on it but I'm guessing maybe half the time? Maybe up to an hour? It's worth a go but as the slow cooker was such a good price it's also worth thinking about buying if there are any any left - even at full price. I'm sure we'll have more in stock soon, and hopefully at introductory price. Keep a look out on line for it. Hope you love the choc pud!

Hello again!
I've managed to get Simon's rice pudding and porridge recipes for you - i hope you're enjoying your slow cookers.

Rice pudding:
110g (4oz) pudding rice
55g (2oz) sugar
25g (1oz) butter
1.2l (2 pints) whole milk
Cooks Essentials raspberry coulis to serve (or raspberry jam - my childhood favourite with rice pudding! KT)

Put it all into the slow cooker, stir and turn on to high and cover. Cook for 5 hours, stirring after the first hour. Serve with the fruit coulis or jam.


Porridge:
1 cup oats
1 1/2 cups water
1 1/2 cups milk
(or I might use 3 cups skimmed milk. KT)

Cook on low for 8 to 10 hours.
Add honey and dried apricots or raisins to serve.

Thanks for the recipes..yum. I saw you i the lovely Ronnie N coral dress today...you look lovley in the colour - as was your hair! Gorgeous! Debs G really suits blue and I hadn't noticed her in that colour before. Im sure you're over the moon Ali K is back! As I said to Debs I can hear the wine glasses already!

I have missed the answer to a recent competition in the Morning Show. It was the one where there was 12 squares. Some phoned in with ruby an other with gems. What was the answer? Desperate to find out, I tried all ways to come up with an answer.
