My family’s favourite dinner!

Hi everyone,

I must have been making this lasagne dish for about 15 years – it pre-dated the move to the house I live in now, and we've been there 13 and a half years! I made it Saturday night after the footie (which we lost!) and the comments were: Sophie – yummy, Daniel – delicious and Chris – very nice!

Incidentally, if you're making it for three people, or two with very large appetites, you can leave out the middle layer of pasta.

Julia's vegetarian lasagne recipe

Julia's

Ingredients:

9 sheets of green lasagne

4oz walnut pieces

8oz frozen chopped spinach

8oz cottage cheese

1 onion

1 clove garlic

1 tin of chopped tomatoes

1 tbsp tomato puree

black pepper to taste

For the cheese sauce:

1 pint skimmed milk

2oz plain wholemeal flour

2 oz margarine

4 oz mature cheddar

2 tbsp grated parmesan

Pre-heat oven to 200'C (400F / Gas Mark 6)

  1. Place spinach in petal steamer in saucepan and steam for about five minutes
  2. Chop walnuts quite finely and mix with cottage cheese and spinach
  3. Chop onion and garlic and soften in a little olive oil
  4. Add tinned tomatoes, tomato puree and black pepper. Bring to boil, cover and simmer while you make the cheese sauce
  5. Melt margarine in non-stick pan, add flour and cook for a minute. Add milk while whisking gently with a balloon whisk. When thoroughly mixed, turn up heat and bring to boil stirring constantly. Take off heat and then stir in grated cheddar
  6. Lightly grease lasagne dish and line with three sheets of lasagne. Pour half of cheese sauce followed by half of tomato sauce over, then cover with three more lasagne sheets. Cover those with spinach/walnut/cottage cheese mixture, then spread over remainder of tomato sauce. Place final three lasagne sheets over this, cover with cheese sauce and sprinkle with parmesan
  7. Place in oven for 30 minutes. Allow to sit for a minute before serving with salad and garlic ciabatta

    sounds delicious. Sorry THEY lost —I know what the atmosphere can be like in our house when Leeds lose, with my husband!!!!! Are you all veggies in your household?

    Sounds great. Will definitely try this. But ditto the request for the choc cake that I’ve heard you mention. You just can’t have enough recipes for chocolate cake so I’d love to know yours. I also hit the big ‘Hawaii’ this year and you are an absolute inspiration!

    I have been looking for a recipe like this for ages after having one similar when I was out for a meal – I have been diagnosed as Coeliac but it shouldn’t be too hard to adapt

    Think you are a brilliant presenter and wanted to let you know that your recipe for the lasagne worked like a treat. I invited my vegeterian and footie friends over last night and every last morsel was eaten (with comments like delicious and can I have a second helping please). Can I just say I and all my family think you are the best presenter and in the same category as Alison Young, whom I absolutely adore for her beauty knowledge. You are an inspiration to all older ladies;you make me smile, laugh and sometimes cry.     Hi Julia – Like the sound of the Vegetarian Lasagne. Everybody keeps mentioning your Chocolate Cake please could I have a copy as me and my granddaughter love baking at weekends together, she is only 11 yrs old.

    Hello Julia, I watched the Gold by Request on Monday with Jan Springer,I think she is a treasure and try never to miss her guesting hours.You were both intrigued by the expanding ring,so I thought I would share that I collect Victorian ladies purses and have three which open and close with this expanding ring then the little round lid which is hinged on to ring fits over the top to keep it securely closed. The expanders were made of many metals I have a silver one whch is attached to a a fine knitted silver purse, and others fitted to the softest leather cut like the segments of an orange then sewn to give a little ball shaped purse when the expander is opened making access very easy.I hope my long winded description hasnt put you off as they are lovely.So its just as the old wise woman said ‘there is nothing new under the sun’ But isnt it fun finding out for yourself.Happy 31st anniversary to both of you.

    Julia Can I please ask you why the centigrade coats vary so much in size. I am an XL and the sizes vary from a 46″ to a 53″. There can be a difference of 7″ between the XL and the 2XL whilst the smaller sizes go up by 2 or 3″. I never know what to order as they vary so much. XL
