January treats – The Healthy Way

With January inevitably comes the need for resolutions to be healthy, get fit and eat better. If you're like me, however, by this stage you are already feeling the need for a little sweet treat every now and then. To satisfy these cravings I have decided to give into them, but that doesn't always mean having to be unhealthy!

I was flicking through The Honestly Healthy cookbook written by Natasha Corrett and there are some really tasty sweet treats in there that are remarkably healthy. So I have chosen three such treats and I am letting you decide which one you'd like to learn how to make and I will make it and maybe even do a video blog for you to follow. They all look really tasty and I am sure any of them will satisfy your cravings. Remember, just comment below and the treat with the most votes wins – that's the one I will make!

The options are:

1. Coconut Flour Chocolate Mousse Cake
2. Lemon & Poppy Seed Almond Cake
3. Coconut Bread

Coconut chocolate mousse cake  Lemon and poppy seed almond cake

Coconut bread

These are all sweet and tasty treats to indulge your naughty side but are all sugar free and wheat free so there is a lot less guilt involved! What could be more perfect? I look forward to making whatever you decide. My sweet tooth is in your hands!

Miceal x

P.S. Don't forget to comment below with your choice!

    Hi Miceal,
For me it’s the lemon one! Citrus all the way for me! How have you been coping in the snow? You always glow with warmth on the screen.

Thanks for your votes guys. I pesonally have never baked with coconut flour and a syou may know was a chocaltier for a while so was tempted by the first one but so far it seems that the lemon and poppt seed cake is the favourite. i am off to ireland tomorrow for a few days to have my very belated Christmas visit woth the family so will count up the votes when I’m back and make the winning cake then!

So the winner is the Lemon and Poppy Seed Almond cake which just inched ahead of the Coconut Flour Chocolate Mousse Cake with the poor old Cocounut Bread only getting one vote.
I shall make the winning cake in the next few days and blog about it (maybe even add a little vidoe for you too!!) then its all round to mine for tea and cake as I can’t eat it all. I’ve just got back from visiting my family in ireland and have piled on a few pounds in only a couple of days! lol Well thats what family are for!
Wish me luck with the cake. (I have a feeling I will end up baking them all at some point in the not too distant future anyway!!)
    Miceal. xx
