Marco, very patiently guided me through the techniques involved in making the perfect milk and how to pour it differently to make gorgeous creamy cappuccinos and lovely lattes.
We used the Illy Coffee Francis Francis X7 Espresso Coffee Machine which is only a fraction of the price of the big £5,000 professional Italian machines they have in many cafes, but the coffee tasted the same – absolutely gorgeous, and I really mean gorgeous – creamy, robust, smooth and balanced!
This shouldn’t have been a surprise as Illy are rather expert at coffee. They sell over six million cups of espresso coffee a day, in more than 140 countries around the world and their coffee is available in more than 50,000 of the best restaurants and coffee bars.
Now, whilst I managed to create a few pretty shapes on the top of my cups, I have a long way to go before I equal the skill of Marco who can consistently create a perfect heart on top of his cappuccinos and a wonderful leaf on his lattes!
Having tried the system, I must say that unlike other machines that seem like a good idea at the time but often never get used, this one will soon be a regular feature in the Biagi household and I’m looking forward to a proper Italian coffee whenever I like!
