I've always liked salad but found it a little un-exicitng, but lately I've been experimenting a bit more and I seem to have found a winning formula of a salad that is healthy and tasty! I make a huge bowl of it then decant into my Prepology Snap Fresh containers, and it then provides several more lunch or dinners!
I make a vegetarian version but if you are a dedicated carnivore just replace the tofu with chicken, ham or any meat of your choice, but I have to say making it vegetarian makes it feel ultra healthy!
Here's the recipe if you fancy making it -
Large bag of spinach
Bag of rocket
2 red onions
1 blog of tofu
1 packet of quorn
1 large cucumber
20 Vittoria tomatoes
1 red, 1 green & 1 yellow pepper
1 pouch pre-cooked lentils
1 pouch pre-cooked quinoa
1 packet of trimmed fine green beans
garlic and chilli to taste
1 – Wash the spinach and rocket (the Prepology salad spinner is great for this!) and place in a large bowl.
2 – Cube the tofu and quorn and shallow fry in olive oil with chilli and garlic – when golden brown put to one side (my favourite pan to shallow free with hardly any oil is my GreenPan saute pan).
3 – Shallow fry the lentils, quinoa, one onion and the green beans. When the beans are cooked by al dente put to one side.
4 – Chop the cucumber, peppers, tomatoes and the other red onion into small chunks.
5 – Add the chopped salad to the spinach and rocket and ensuring the fried ingredients have cooled a little add the tofu, quorn and lentil mix to the big bowl of salad. Toss this all together and settle down with a big plate of yummy goodness!!
