Craig’s Super Salad!


Using the Genius Salad Chef for prep Hiya! Hope you're all well.

I've always liked salad but found it a little un-exicitng, but lately I've been experimenting a bit more and I seem to have found a winning formula of a salad that is healthy and tasty! I make a huge bowl of it then decant into my Prepology Snap Fresh containers, and it then provides several more lunch or dinners! 

I make a vegetarian version but if you are a dedicated carnivore just replace the tofu with chicken, ham or any meat of your choice, but I have to say making it vegetarian makes it feel ultra healthy!

Here's the recipe if you fancy making it –

Large bag of spinach
Bag of rocket
2 red onions
1 blog of tofu
1 packet of quorn
1 large cucumber
20 Vittoria tomatoes
1 red, 1 green & 1 yellow pepper
1 pouch pre-cooked lentils
1 pouch pre-cooked quinoa
1 packet of trimmed fine green beans
garlic and chilli to taste

Craig and his Super Salad! Method:
1 – Wash the spinach and rocket (the Prepology salad spinner is great for this!) and place in a large bowl.
2 – Cube the tofu and quorn and shallow fry in olive oil with chilli and garlic – when golden brown put to one side (my favourite pan to shallow free with hardly any oil is my GreenPan saute pan).
3 – Shallow fry the lentils, quinoa, one onion and the green beans. When the beans are cooked by al dente put to one side.
4 – Chop the cucumber, peppers, tomatoes and the other red onion  into small chunks.
5 – Add the chopped salad to the spinach and rocket and ensuring the fried ingredients have cooled a little add the tofu, quorn and lentil mix to the big bowl of salad.  Toss this all together and settle down with a big plate of yummy goodness!!

Hope you like the pictures, I now use something called Salad Chef to prepare this salad, makes it much easier and quicker and it is going to be a TSV tomorrow (Monday 13th June), so if you like your salads or just want to start eating healthy this summer, it could be worth taking a look.

    Wow Craig, that sounds fantastic! Will make some from your recipe and try it as it sounds really tasty and healthy. I’ll keep my eye open for the TSV as that sounds good too. Thanks for sharing and I hope your asthma has improved.
