We all have those hectic days when there’s just so much to do and so little time. So it’s always helpful to find ways of making things a little easier – our Brand Ambassador Ruth shares her quick chicken and pepper recipe with some handy tips for when you’re short on time…

Ruth: This is a very quick, one pot recipe. I use a shop-bought sauce but you can just use tinned tomatoes and chilli. I’ve recently discovered frozen onions… they’ve changed my life! You can cook them from frozen and no more crying after peeling. I use frozen chopped garlic too.

Ingredients – feeds 2 – 3

  • 2 x chicken breasts (skin off, diced into bite-size chunks)
  • Olive oil
  • 2 x onions (red or white, sliced) I tend to use red (you can these frozen too!)
  • 2 x cloves garlic finely sliced or two rounded teaspoons of frozen
  • 3 x peppers (any colour you fancy) I use red, yellow and orange to add colour
  • 2 x courgettes (chunky slices otherwise they disintegrate into mush)
  • 1 x small jar or half a large jar of tomato and chilli sauce or use a tin of chopped tomatoes and add some chilli flakes or powder (depending on how hot you like it)
  • 1 x packet of whole grain microwave rice

 

Method:

  • In a large non-stick saucepan or casserole dish heat the olive oil and flash fry the chicken pieces, once brown transfer onto kitchen roll on a plate to drain
  • Add a little more oil if necessary and gently sauté the onion and garlic until softened
  • Add the peppers and courgettes
  • Transfer the chicken back into the pot and add the jar of sauce or chopped tomatoes with a teaspoon of chilli flakes to taste (depending on how hot you like it)
  • Put the lid on and turn the heat up until the liquid starts to bubble then turn it down to simmer for 15 – 20 minutes
  • Serve with the rice – cooked as per the instructions
